68 cups (17 quarts!) of Chicken Vegetable Soup! Made it yesterday to have on hand for starting back to my WOE tomorrow! One serving (1 cup) has 3.86 Net Carbs, 1.63g Fat, 1.7g Fiber, and 4.7g Protein. There's really probably more fat in it than that, but I wasn't sure how to record the stock produced by cooking the boneless & skinless chicken thighs. BJ's size chicken thighs, a whole cabbage, 2 pounds of carrots, 2 pounds of celery, 20 oz fresh spinach plus water, chicken stock, 2 cans of green beans, 2 cans of corn one can of peas, and one package Knorr Vegetable Recipe mix. Shouldn't have any problem getting in my veggies in the weeks to come!
Drank 48 oz of water the past two days. Today, I'm overindulging in Diet Coke, knowing that I'll be REALLY pushing the water starting tomorrow. I hope to get in 64 oz a day.
