Kmwallace it's easy! I use chicken thighs because they're the best deal$, but use breasts if you want. Debone and skin. Cube. Coat generously with garlic, ginger, salt, pepper and just a bit of cinnamon. Place into a HOT pan of EVOO and rice vinegar. While cooking add a few tablespoons of honey. Add a slurry of corn starch to thicken it up a bit. Once chicken is done set aside. While chicken is cooking, chop stir fry veggies. Use whatever you want, but I used red cabbage, broccoli, cauliflower, mushrooms,shredded carrots sweet peppers and orange sweet peppers. Heat a wok with EVOO, soy sauce and as much garlic cloves as your heart desires. When hot, add your veggies and the juices from your chicken. Add more honey to taste. Cook on fairly high heat for just a few minutes. You can add a bit of garlic chili sauce if you like the heat.(I do!) Or some red pepper flakes. Stir periodically. Add chicken back into wok. Stir thoroughly to coat everything with flavor. Turn down heat and simmer until the veggies are the amount of "done" you like them. Serve and enjoy! Goes well on a bed of spaghetti squash or quinoa or rice if you can have it.
