Super Bowl Sunday did me dirty. LOL
I remember last year simply grazing on carrots and celery from the obligatory vegetable dip someone felt like they had to bring. I remember going to Famous Dave's and having a meltdown in the bathroom because I didn't know what to order. This year was completely different. I ate what I wanted to eat. Granted, I didn't go nuts. I wasn't shoveling chips and Doritos into my mouth my the truckload, but I ate healthy things in excess with means they are no longer healthy (damn you trail mix for being delicious!)
As of today, I'm exactly where I was 5 days ago. I'm not going to weigh in until Friday, for real. Once a week should be good. I'm not eating bad things, but for some reason I'm always hungry. Like, starving. I eat 3 meals a day, I've been adding more fruits to my diet, and I need to work on adding vegetables. It shouldn't be terribly hard, it's just that I hate eating late, so I prefer to cook things that don't take a terribly long time to prepare. I feel like boiling water and steaming vegetables takes forever! I will work on getting vegetables into my diet. That is what I will do! Try to have at least 3 servings of vegetables every day. Whether it's lettuce on my sandwich or a snack of carrots. I will do it! Starting tomorrow!
Anyway, Valentine's weekend is this weekend. I'm making a Chocolate Raspberry Pavlova for dessert. Oh my goodness. I can't imagine it being terrible for you. There isn't that much sugar in it (1 1/2 cups spread out over 8-12 servings is like less than a 1/10 of a cup) and it's meringue based, which means egg whites. So, YAY! Here's the link if anyone is interested in making this.
Chocolate Raspberry PavlovaJust be careful and make sure you use the conversion chart, Nigella had to go and be British!
