Wow! So I made my first recipe with cauliflower rice and it is AMAZING.
Here is my Shrimp fried rice! It's 667 calories for the entire dish (2 servings), or about 330 calories per serving!
- 10 raw/peeled shrimp
- half head of cauliflower (medium sized)
- 1 1/2 cup sliced fresh mushroom
- 1 med/large egg
- 1 tablespoon soy sauce
- 1 table spoon olive oil
- 1 table spoon sesame oil
I sauteed the shrimps and then set them aside and sauteed the mushrooms and just when they were nearly cooked I added in the cauliflower rice with sesame oil and soy sauce. I fried it all up for about 5 minutes adding the egg in the middle and letting it bake and then breaking it up.
Amazing! I had half & leftovers for dinner tomorrow!
