A batch of banana walnut oatmeal muffins. 138 calories each. They look a bit dark in the picture but it’s the lighting, also made with dark brown sugar which makes them a bit darker. I usually have a couple of these for breakfast. Very filling!

Sorry that took a while, here’s the recipe: Ingredients: 1 cup flour 1 and 1/3 cups large flake oatmeal 1/2 tsp salt (or to taste) 1 tsp baking powder 1 tsp baking soda 1 tsp cinnamon 1/2 tsp nutmeg 1 tsp vanilla 1/3 cup brown sugar (loosely packed) 1 single container applesauce (unsweetened) 3 ripe bananas 1/4 cup walnut pieces Instructions: Preheat oven at 350C In a small bowl, put oatmeal and add just enough water to moisten the lot. Set aside. In another bowl, add the flour, baking powder, baking soda, cinnamon and nutmeg. In a 3rd bowl, add the mashed bananas, the sugar, salt, vanilla and applesauce and mix well. Take the flour mix and slowly incorporate in the wet mixture. Then take the oatmeal (the water should be fully absorbed by now) and add to the mix. Finally, add the walnuts and put the batter in muffin tins. Bake for 30 minutes or until a nice golden brown color.
