Currently 5'3" and 123 lbs. I'm working on gaining muscle (or at least maintaining it) while reducing my fat percentage, which I'm finding hard to do! Any tips in how to add more protein to my diet?

You may want to start with someone doing an accurate bodyfat% on you with calipers, and then you can determine your macros more effectively. A great book is Tom Venuto's "Burn the Fat, Feed the Muscle" in which he outlines macros for bulking and macros for cutting.
